Or you could try to recreate the convenience foods found at the store. For instance I found that when we didn't have leftovers ready for my dh to take for lunch he would either take canned soup or a burrito or hot pocket. So in late summer I bought the ingredients to make a large batch of black bean burritos and a batch of cajun lentil soup. I got 8 servings of soup I believe and 20 burritos.
